Chipotle Pasta Salad

Ingredients

  • 16 ounces pasta boiled, drained, rinsed in cold water
  • 2 cups grape or cherry tomatoes sliced in half
  • 1 bunch cilantro chopped (mostly the leaves)
  • 1 green bell pepper diced
  • 1 cup red onion diced
  • 1 6 ounce can black olives sliced
  • 1 15.25 ounce can corn drained
  • 1 15 ounce can black beans drained and rinsed
  • 2 cups sour cream
  • 1/2 cup milk
  • 2 tbsp lime juice
  • 1 1.13 ounce package Grill Mates Chipotle Pepper Marinade
  • 1 tsp chili powder
  • 1/2 tsp cumin
  • 1/2 tsp garlic powder

Instructions

  1. Prepare vegetables as the pasta cooks.

  2. In a large bowl, place cooked pasta, halved tomatoes, chopped cilantro, diced green pepper and red onion, sliced olives, drained corn and drained and rinsed black beans. Set aside.

  3. Make dressing in a smaller bowl: mix sour cream, milk, and lime juice until smooth, using a whisk. Add Chipotle seasoning, chili powder, cumin and garlic powder. Stir well to combine.

  4. Pour dressing over pasta mixture in the large bowl. Stir to combine.

  5. Chill and serve. Enjoy!
