The best breakfast casserole recipe ever!
Slice mushrooms, dice onion, and mince garlic.
Place butter in a frying pan and begin to melt. Add mushrooms, onion, and garlic in frying pan and cook until tender.
Grease a 9 X 13 baking dish.
Place hash browns in the bottom of the 9 X 13 dish.
Sprinkle bacon crumbles on top of the hash browns.
Using a slotted spoon, distribute the mushroom mixture evenly on top of the bacon. Leaving the liquid in the frying pan.
Sprinkle the grated cheese on top of the mushroom mixture.
In a mixing bowl, combine eggs, milk, salt, pepper, and parsley well with a whisk. Then, pour this mixture over all of the ingredients in the 9 X 13 baking dish.
Cover with foil and allow to bake at 400° for 60-70 minutes. You want the egg to be set in the center of the casserole. Remove the foil for the last 3-5 minutes of baking.
Allow to cool for 3-5 minutes. Serve and enjoy!!
