Sour Cream Mashed Potatoes

Ingredients

  • 5 pounds potatoes peeled, washed and cut into chunks
  • 1 cup green onion diced
  • 2 cloves garlic minced
  • 4 Tbsp butter
  • cups sour cream
  • 1 tsp pepper
  • 2 tsp salt

Instructions

  1. Place diced potatoes into a saucepan and cover with water. Bring to a boil and boil for 20 minutes-until potatoes are fork tender.

    If you are making these in a slow cooker, place the potatoes into the slow cooker and cover with water. Cook on high for about four hours-or until fork tender.

  2. When the potatoes are tender, drain the water.

  3. Mash the potatoes with a potato masher or an electric mixer until smooth.

  4. Add in the green onion, garlic, butter, sour cream, pepper, and salt. Mix to combine-until smooth and creamy. Enjoy!
