Zucchini Carrot Bread

Ingredients

  • 2 large eggs
  • 1/2 cup milk
  • 2/3 cup oil
  • 2 1/4 cups flour
  • 1 cup sugar
  • 1/4 tsp cloves ground
  • 1 1/2 tsp cinnamon ground
  • 1/8 tsp nutmeg ground
  • 1/2 tsp baking soda
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 3/4 cup zucchini grated
  • 3/4 cup carrots grated
  • 1/2 cup pecans chopped, optional

Instructions

  1. Combine eggs, milk, oil and sugar with an electric mixer.

  2. Add flour, cloves, cinnamon, nutmeg, baking soda, baking powder and salt. Mix just until moistened.

  3. Add grated zucchini and grated carrots (pecans too, if using).

  4. Stir to just combine.

  5. Bake in a greased loaf pan at 350° for 60-65 minutes. (Until a toothpick comes out clean).

  6. Let cool five minutes before removing from the pan. Slice and enjoy. You may like this warm or you may like this cold. I refrigerate it before serving-I like this bread cold. Enjoy!
