Slow Cooker Pork Carnitas

Ingredients

  • 4 pounds pork loin (or pork shoulder or pork butt)
  • 2 tbsp chili powder
  • 4 tsp dried cumin
  • 3 tsp dried oregano
  • 2 tsp salt
  • 1 tsp black pepper
  • 4 cloves garlic minced
  • 1 large onion cut into thin wedges
  • 3/4 cup orange juice
  • 1/4 cup lime juice
  • Toppings of choice-listed below

Instructions

  1. Combine chili powder, cumin, oregano, salt and pepper. Mix to combine.

  2. Coat the pork loin with the seasoning mix.

  3. Place the coated pork loin into the slow cooker.

  4. Add the minced garlic, sliced onions, orange juice and lime juice.

  5. Cover and cook on low for 7-8 hours. Until cooked through.

  6. Remove the pork from the slow cooker and shred the meat.

  7. Place the shredded meat into a baking dish or a baking sheet.

  8. Broil the meat for 2-5 minutes to get some crispy edges. Stir as needed to crisp as much as you desire.

  9. Reserve the juices in the slow cooker to add to the meat for juiciness and flavor. Mix some of the juices in after broiling.

  10. Serve in tortillas with the juices-if more is needed on the meat, pico or salsa, grated cheese, sour cream lettuce, cilantro, guacamole and/or diced tomatoes-your favorite taco seasonings. Enjoy!
