Ingredients

  • 2 pounds beef bottom roast or chuck roast
  • 8 French steak rolls
  • 8 slices provolone cheese
  • butter

Ingredients for Au Jus:

  • 14 ounces beef broth
  • 1 bay leaf
  • 1/8 tsp thyme
  • 1/4 tsp black pepper
  • 1/4 tsp oregano
  • 1/2 tsp onion powder
  • 1/2 tsp garlic powder
  • 2 tbsps Worcestershire sauce
  • 1 tbsp dried onion or very finely diced onion

Instructions

  1. Place Au Jus ingredients into a slow cooker and stir.

  2. Cut the beef roast in half and brown all sides. (cut in half to get more of the meat under the sauce in the slow cooker)

  3. Place browned meat into the slow cooker and spoon Au Jus over the roast.

  4. Cover and cook for 8 hours on low.

  5. After 8 hours, remove the beef from the slow cooker and shred. Cover with foil to keep warm and set aside. Remove the bay leaf from the Au Jus.

  6. Slice steak rolls in half and butter the cut sides of the bread. Place on a baking sheet and place under the broiler to lightly toast.

  7. Remove rolls from oven and evenly distribute the shredded beef onto the bottom sides of the 8 rolls.

  8. Top the beef with cut slices of provolone cheese.

  9. Remove the top sides of the rolls and place the bottom sides with the meat and cheese back in the oven under the broiler to melt the cheese.

  10. Remove from the oven. Place the top sides of the rolls onto the sandwiches and serve with the Au Jus from the slow cooker-dip sandwiches in the Au Jus. Enjoy!
