Greek Pasta Salad

Ingredients

  • 16 ounces pasta cooked, rinsed and drained
  • 1 medium English cucumber peeled and sliced
  • 2 cups grape or cherry tomatoes cut in half
  • 6 ounces black olives sliced
  • 1/3 cup red onion diced
  • 1/4 cup fresh parsley chopped
  • 8 ounces Mozzarella balls cut in half or quarters
  • 4 ounces salami sliced

Dressing Ingredients:

  • 1 cup olive oil
  • 1/2 cup red wine vinegar
  • 1 ½ tsp salt
  • 1 tsp black pepper
  • 2 tsp oregano
  • 1 tsp garlic powder
  • 3 tbsp granulated sugar
  • 2 tbsp dijon mustard
  • 2 tbsp lemon juice

Instructions

  1. Cook pasta according to package ingredients. Drain and rinse in cold water. Set aside.

  2. Prepare cucumbers, tomatoes, olives, onion, parsley, mozzerella, and salami. Place all salad ingredients into a large bowl.

  3. Combine all of the dressing ingredients and mix until well combined.

  4. Pour dressing over salad ingredients. Mix to distribute dressing.

  5. Chill for 2-3 hours. Stir again before serving.
