Garlic Bacon Pulled Pork Sandwiches

A simple pulled pork sandwich made in a slow cooker.

Ingredients

  • 3.5 pound pork loin or desired cut of pork
  • 1 medium onion diced
  • 1 1/2 cups bacon crumbles or crispy bacon broken up more for topping
  • 2 large cloves garlic minced
  • 1/3 cup brown sugar
  • 1/4 tsp salt
  • 1/4 tsp pepper
  • buns toasted-optional but good
  • barbecue sauce drizzle over the meat

Instructions

  1. In a slow cooker, place the pork loin, diced onion, minced garlic, brown sugar, salt, pepper and bacon crumbles.

  2. Cook on low for 6-8 hours.

  3. When the pork roast has reached in internal temperature of 145℉, remove from the slow cooker and let rest for 3 minutes.

  4. Place the roast back into the slow cooker and shred with the juices.

  5. Serve on fresh or toasted buns. Top the meat with desired amount of barbecue sauce and extra bacon pieces. Enjoy with fries, chips, a salad or other fruits and veggies.
