French Breakfast Muffins

Ingredients

  • 1/2 cup oil
  • 1 cup milk
  • 2 eggs
  • 1 tsp vanilla
  • 3 cups flour
  • 3 tsp baking powder
  • 1/4 tsp baking soda
  • 1 tsp salt
  • 1 cup sugar
  • 1/2 tsp nutmeg
  • 1/8 tsp cinnamon

Muffin Topping:

  • 7 tbsp butter
  • 1/2 cup sugar
  • 1 tsp cinnamon

Instructions

  1. Combine oil, milk, eggs and vanilla. Whisk to combine.

  2. Add flour, baking powder, baking soda, salt, sugar, nutmeg and cinnamon to the milk mixture. Mix until just combined.

  3. Place batter into greased muffin cups.

  4. Bake at 350° for 20-25 minutes.

  5. Melt butter and mix the cinnamon and sugar in a bowl.

  6. Remove from the oven.

  7. As soon as you can touch the muffins, roll them in the melted butter and then in the cinnamon and sugar mixture.

  8. Enjoy hot!
