Ingredients

  • 1 1/2 pounds carrots
  • 1 1/2 tbsps olive oil
  • 1 to 1 1/4 tsp salt more to taste
  • 1/2 tsp pepper
  • dried parsley garnish

Instructions

  1. Peel and cut carrots into similar sized chunks and then, cut the chunks into halves or quarters as needed to get similar sized pieces.

  2. Place carrots on parchment paper on a baking sheet.

  3. Drizzle carrots with oil. Mix to coat.

  4. Sprinkle with salt and pepper. Stir to coat.

  5. Bake in a 425° oven for 25-30 minutes, until desired tenderness.

  6. Serve with a sprinkle of parsley to garnish. Enjoy with chicken, beef, pork, fish, holidays or any dinner.
