Peel and cut carrots into similar sized chunks and then, cut the chunks into halves or quarters as needed to get similar sized pieces.
Place carrots on parchment paper on a baking sheet.
Drizzle carrots with oil. Mix to coat.
Sprinkle with salt and pepper. Stir to coat.
Bake in a 425° oven for 25-30 minutes, until desired tenderness.
Serve with a sprinkle of parsley to garnish. Enjoy with chicken, beef, pork, fish, holidays or any dinner.
