An easy breakfast and a great way to use sour dough discard.
Mash bananas well.
Then, mix in the eggs and the sour dough discard. Mix well.
Add flour, baking powder and vanilla. Mix to combine.
Cook pancakes on a hot griddle.
I add fresh blueberries to the pancake batter as soon as I pour the dough onto the griddle. Or you can add the blueberries to the batter in the bowl-before pouring batter onto the griddle.
Flip pancakes when the first side is golden brown. Cook through on the second side. Enjoy with syrup, extra berries and/or whipping cream.
This recipe makes 7-1/2 cup pancakes.
