Roasted Tomatillo Salsa

Ingredients

  • 6-7 tomatillos peeled, washed and stem removed
  • 2 Roma tomatoes washed and stem removed
  • 1/3 small white onion peeled and cut into chunks
  • 4 jalapeno or serrano peppers washed and stem removed-can remove seeds for less heat
  • 3 cloves garlic peeled
  • 1/3 cup cilantro leaves
  • 3/4 tsp salt
  • 1 1/2 tbsp fresh lime juice

Instructions

  1. Prepare tomatillos, tomatoes, onion, peppers and garlic. Place on a cookie sheet and roast for 15 minutes in a 450° pre-heated oven.

  2. After roasting, place tomatillos, tomatoes, onion, peppers and garlic into a blender.

  3. Add cilantro, salt and lime juice. Blend to desired consistency.

  4. Serve or refrigerate to chill.
