An easy and healthy breakfast cookie the whole family will enjoy.
Mash the bananas in a mixing bowl.
Add the oats, apple sauce, milk, egg, vanilla, cinnamon, salt and chocolate chips or other mix-in, as desired. Stir to combine.
When mixture is well combined, Use a cookie scoop to place cookies on a parchment covered cookie sheet. Flatten each cookie (a little bit) with the back of the cookie scoop. (I like to press a few extra chocolate chips into the tops of the flattened cookies before baking).
Bake at 350° for 22-23 minutes. Cool on the pan for 2-3 minutes and enjoy!
Note: I used a 3 tablespoon cookie scoop to make these breakfast cookies.
