Creamy Sausage Tortellini Soup

A simple creamy soup with sausage, vegetables and cheese tortellini.

Ingredients

  • 1 pound ground Italian sausage mild
  • 1/2 cup onion diced
  • 2 cloves garlic minced
  • 1 cup carrots thinly sliced
  • 1 cup heavy whipping cream
  • 4 cups cheese tortellini frozen or fresh
  • 2 cups baby spinach chopped
  • 14.5 ounce can petite diced tomatoes drain well
  • 3 14.5 ounce cans chicken broth
  • 1 tsp salt
  • 1/2 tsp pepper
  • 2 tsp Italian seasoning
  • 1/2 tsp dry mustard
  • 1/4 cup flour

Instructions

  1. In a large stock pot, crumble cook ground sausage.

  2. When cooked through, remove sausage from the pan with a slotted spoon and place in a bowl. Set aside.

  3. Leaving grease from the sausage in the bottom of the stock pot, add diced onion and sliced carrots. Cook until nearly tender-12-15 minutes.

  4. Next, add minced garlic and flour. Stir and cook for one more minute.

  5. Add chicken broth, salt, pepper, Italian seasoning, dry mustard and heavy cream. Bring to a boil and then, lower the heat to simmer the soup.

  6. Add tortellini and simmer for 5-7 minutes.

  7. When carrots are desired tenderness, add drained diced tomatoes and chopped spinach.

  8. Heat to wilt spinach.

  9. Serve with freshly grated parmesan, if desired. Enjoy with some delicious bread.
