A simple creamy soup with sausage, vegetables and cheese tortellini.
In a large stock pot, crumble cook ground sausage.
When cooked through, remove sausage from the pan with a slotted spoon and place in a bowl. Set aside.
Leaving grease from the sausage in the bottom of the stock pot, add diced onion and sliced carrots. Cook until nearly tender-12-15 minutes.
Next, add minced garlic and flour. Stir and cook for one more minute.
Add chicken broth, salt, pepper, Italian seasoning, dry mustard and heavy cream. Bring to a boil and then, lower the heat to simmer the soup.
Add tortellini and simmer for 5-7 minutes.
When carrots are desired tenderness, add drained diced tomatoes and chopped spinach.
Heat to wilt spinach.
Serve with freshly grated parmesan, if desired. Enjoy with some delicious bread.
