Pumpkin Spice Whoopie Pies

Ingredients

Ingredients for the Cookies:

  • 15.25 ounce Betty Crocker Super Moist Spice cake mix
  • 15 ounce can pumpkin puree
  • 2/3 cup water
  • 1/2 cup vegetable oil
  • 3 eggs

Ingredients for the Filling:

  • 3/4 cups butter softened
  • 3 cups powdered sugar
  • 1 tsp vanilla
  • 1 cup Marshmallow Creme

Instructions

Cookies:

  1. Pre-heat oven to 350°

  2. In a mixing bowl, combine spice cake mix, pumpkin puree, water, oil and eggs until blended.

  3. Using a 2 tablespoon cookie scoop, scoop batter and drop onto a large greased cookie sheet. Leave space between cookie drops like you would for other cookies. Make sure the cookies are similar size when dropping the batter onto the pan. (should make 36 cookies=18 whoopie pies

  4. Bake cookies at 350° for 10-13 minutes-do not over bake.

  5. Remove from oven and cool on a cooling rack.

Filling:

  1. In another mixing bowl, combine softened butter, powdered sugar, vanilla, and Marshmallow Creme until smooth and creamy.

  2. Pipe (or spread) filling onto half of the cookies and place the other half of the cookies on top of the filling to make cookie sandwiches-whoopie pies.

  3. Serve and enjoy!
