A simple pantry meal recipe for busy nights.
Pre-heat oven to 350°.
Spray a 2.5 quart baking dish and set aside.
Crumble cook ground beef with diced onion.
Add minced garlic to the ground beef and onion when it is nearly cooked through.
When beef is cooked through, mix in the cream of mushroom soup, diced green chilies and the green Chile enchilada sauce. Heat through.
Place 1/2 of the crushed tortilla chips in the bottom of the baking dish.
Top the tortilla chips with 1/2 of the meat mixture and half of the cheese.
Repeat layers with remaining ingredients.
Cover and bake at 350° for 35-40 minutes.
Enjoy with sliced olives, sour cream, cilantro leaves, and diced tomatoes, if desired.
