Ingredients

  • 4 cups water divided
  • 1 1/2 cups sugar
  • 1-1 1/4 cups fresh squeezed lemon juice to taste

Instructions

  1. In a small sauce pan, bring 2 cups of water and sugar to a boil to dissolve sugar. Remove from the heat and cool.

  2. Place 3 lemons at a time in the microwave and heat for 20 seconds.

  3. Remove from the microwave and roll lemons firmly, with the palm of your hand, across the kitchen counter to break up the pulp inside.

  4. Cut lemons in half and juice the lemons. Repeat with more lemons until you have enough juice.

  5. When sugar water has cooled, add two cups very cold water to the mixture.

  6. Add freshly squeezed lemon juice to the sugar and water mixture using a fine wire mesh strainer to remove pulp and any seeds.

  7. Enjoy with ice now or refrigerate to chill and serve with lemon slices and ice as desired.
