Ingredients

  • 2 pounds chicken breast (or 5 cups chopped rotisserie chicken)
  • 4 14.5 ounce cans chicken broth
  • 3/4 cup onion diced small
  • 3 cups celery sliced
  • 3 cups carrots sliced
  • 2 bouillon cubes
  • 2 bay leaves
  • 1 tsp poultry seasoning
  • 1/2 tsp salt
  • 3/4 tsp pepper
  • 1 1/2 tsp dried parsley
  • 3 cups No Yolks extra broad egg noodles

Instructions

  1. Place chicken into the bottom of the slow cooker.

  2. Top the chicken with the bay leaves, salt, pepper and parsley.

  3. Add the diced onion, sliced celery and carrots.

  4. Pour chicken broth over the vegetables and place bouillon cubes in the slow cooker.

  5. Cover and cook for 8 hours on low.

  6. At 12-15 minutes before the 8 hours is up, remove the chicken breast and set on a cutting board.

  7. Add the 3 cups of No Yolks extra broad egg noodles and stir and cover.

  8. Chop the chicken into bite-sized pieces. Add the pieces back into the slow cooker and stir.

  9. Remove bay leaves and serve when egg noodle are desired tenderness.
