Copycat Mexican Pizza

Ingredients

  • 16 tostadas
  • 1 pound ground beef
  • 1-1.25 ounce package taco seasoning plus required water-per package directions
  • 16 ounce can refried beans
  • 10 ounce can Rotel
  • salsa
  • cheddar or Mexican blend cheese grated
  • green onions sliced
  • tomatoes diced
  • sour cream

Instructions

  1. Crumble cook ground beef. Drain any fat.

  2. Add taco seasoning and required water and mix to combine. Heat through.

  3. Add refried beans and undrained Rotel. Stir to combine and heat through.

  4. Place two to three tostadas on a large baking sheet at a time.

  5. Spread 1/2 cup of the meat mixture on each tostada.

  6. Place another tostada on top of the meat mixture.

  7. Spread salsa on top of the tostada and sprinkle with grated cheese.

  8. Place baking sheet under the broiler on low just to melt the cheese.

  9. Remove pan from the oven and top pizzas with tomatoes, green onion and sour cream, as desired. Repeat with more tostadas as needed.

  10. Tostadas will soften as they sit so, eat them right away and enjoy.
