Sausage Crescent Roll Breakfast Casserole

Ingredients

  • 1 tube Pillsbury Crescent Rolls
  • 1 pound ground sausage
  • 1 small onion diced
  • 12 large eggs
  • 10 ounce can Rotel drained
  • salt and pepper to taste
  • 3 cups Colby cheese grated

Instructions

  1. Crumble cook ground sausage and drain. Set aside.

  2. Scramble cook the eggs with the drained Rotel, and salt and pepper. When cooked through, add 1 1/2 cups grated cheese. Mix to distribute and melt cheese.

  3. Lay the crescent roll in a lightly greased 9 x 13 baking dish. Press seams closed and press the dough up the sides a bit.

  4. Sprinkle sausage on top of the crescent roll dough.

  5. Layer egg mixture on top of the sausage.

  6. Sprinkle 1 1/2 cups grated cheese on top of the egg mixture.

  7. Bake uncovered at 350° for 20-22 minutes.
