Seasoned Pork Loin with Gravy

Ingredients

  • 2-2 1/2 pounds pork loin
  • 2 14.5 ounce cans chicken broth
  • 3 tbsps soy sauce
  • 1 tbsp lemon juice
  • 4 cloves garlic minced
  • 1/2 tsp black pepper
  • 1/2 tsp ground ginger
  • 1/4 tsp thyme
  • 2 beef bouillon cubes
  • 3/4 cups warm water
  • 6 tbsps flour

Instructions

  1. Place chicken broth, soy sauce, lemon juice, minced garlic, pepper, ground ginger and thyme into a slow cooker and stir to combine.

  2. Add pork loin to the slow cooker. Cover and cook for 8 hours on low.

  3. When pork loin has cooked for 8 hours, remove it from the slow cooker.

  4. Pour juices from the slow cooker into a sauce pan. Add bouillon cubes and bring to a boil.

  5. In a small bowl or a glass measuring cup, mix warm water and flour with a whisk until smooth and well blended.

  6. Slowly add roux (flour and water mixture) to the sauce pan, using a whisk.

  7. Mix and simmer to thicken.

  8. Serve gravy over meat and mashed potatoes, if desired.
