Lemon Chicken

An easy weeknight dinner recipe made with ground chicken and a lemon sauce.

Ingredients

  • 1 pound ground chicken
  • 2 tbsps butter
  • 2/3 cup chicken broth
  • 1 tsp lemon zest optional
  • 1/2 cup ReaLemon Juice or freshly squeezed
  • 2 tsp white vinegar
  • 1/3 cup sugar
  • 2 tbsp water cool
  • 2 tbsp corn starch
  • green onions to garnish
  • sesame seeds to garnish
  • cooked rice

Instructions

  1. Prepare rice-Minute Rice or Oven Baked Rice-link above in post.

  2. Crumble cook the ground chicken. Drain any fat or juices and set aside.

  3. Zest the lemon (if using zest) and then juice enough lemons to get 1/2 cup juice. Or use ReaLemon juice, which is faster.

  4. In a medium sauce pan, melt the butter. Then, add the chicken broth, lemon zest, lemon juice, sugar and vinegar. Bring to a boil, stirring frequently with a whisk to dissolve the sugar.

  5. Mix corn starch and cool water together and add to the lemon mixture, slowly to reach desired consistency. Stir with a whisk.

  6. Combine sauce and cooked ground chicken. Or serve separately.

  7. Serve over rice and garnish with green onions and sesame seeds.

  8. *Save time by getting the rice in the oven. Then, cooking sauce and ground chicken at the same time-in separate pans, of course. 😊 Just be careful not to burn either one.
