An easy weeknight dinner recipe made with ground chicken and a lemon sauce.
Prepare rice-Minute Rice or Oven Baked Rice-link above in post.
Crumble cook the ground chicken. Drain any fat or juices and set aside.
Zest the lemon (if using zest) and then juice enough lemons to get 1/2 cup juice. Or use ReaLemon juice, which is faster.
In a medium sauce pan, melt the butter. Then, add the chicken broth, lemon zest, lemon juice, sugar and vinegar. Bring to a boil, stirring frequently with a whisk to dissolve the sugar.
Mix corn starch and cool water together and add to the lemon mixture, slowly to reach desired consistency. Stir with a whisk.
Combine sauce and cooked ground chicken. Or serve separately.
Serve over rice and garnish with green onions and sesame seeds.
*Save time by getting the rice in the oven. Then, cooking sauce and ground chicken at the same time-in separate pans, of course. 😊 Just be careful not to burn either one.
