Ingredients

  • 1/2 cup butter
  • 4 tbsp flour
  • 2 cups V-8 juice
  • 14.5 ounce can chicken broth
  • 29 ounces petite diced tomatoes including juice
  • 1 cup half and half
  • 1 tsp hot sauce
  • 1 ½ tbsp basil pesto
  • 1/2 tsp pepper
  • 1/2 tsp salt
  • 1/4 cup parmesan cheese freshly grated

Instructions

  1. Melt butter in a large pot.

  2. Add the flour to the melted butter, making a roux.

  3. Place tomatoes and juice into a blender and blend until smooth.

  4. Add blended tomatoes to the butter mixture. Stir.

  5. Add V-8, chicken broth, salt, and pepper. Stir and bring to a boil.

  6. Reduce heat. Add half and half, hot sauce, and basil pesto.

  7. Stir and heat through.

  8. Serve hot and top with freshly grated parmesan cheese.
