Breakfast Muffins

A savory breakfast muffin or mini breakfast casseroles.

Ingredients

  • 6 hash brown patties rectangular
  • oil
  • 1/2 cup onion diced small
  • 1/2 cup green chilies
  • 1 cup ham diced
  • 1 cup cheese (Monterey Jack, Mozzarella, Swiss, or Cheddar) grated
  • 5 eggs
  • 1/2 cup milk
  • 1/4 tsp salt
  • 1/8 tsp pepper

Instructions

  1. Spray pan with cooking spray.

  2. Cut hash brown patties in half and place in the bottom of the cups in the pan.

  3. Cook onion in a little oil in a frying pan.

  4. Add green chilies and ham to onion and heat through.

  5. Divide ham mixture between the 12 cups.

  6. Sprinkle grated cheese on top of the hash brown and ham mixture.

  7. In a mixing bowl, whisk eggs, milk, salt, and pepper. Mix well.

  8. Pour egg mixture evenly over the 12 cups.

  9. Bake at 350° for 20 minutes.
