Combine all seven marinade ingredients in a bowl that is big enough to hold all of the chicken.
Add chicken and stir to coat chicken.
Cover with plastic wrap and place in the refrigerator for 2 hours or longer-even overnight if desired.
Place oil in the bottom of a wok or a deep frying pan.
Add chicken mixture to pan and begin to cook. Cook for 2 minutes, stirring to brown on all sides.
Add onion, bell peppers, and garlic. Cook chicken and vegetables until chicken is cooked through and vegetables are desired tenderness.
Place some chicken and vegetables in the center of a leaf of lettuce.
