A garden fresh pizza sauce recipe that is easy to make.
Wash and core tomatoes. Cut them into chunks and place in a greased 9 x 13 baking dish.
Peel and cut onion into chunks. Place in the 9 x 13 baking dish.
Rinse and pat basil leaves dry. Place in baking dish.
Peel and cut garlic cloves in half. Place in baking dish.
Drizzle olive oil over the top and stir.
Bake at 375° for 1 hour.
When the hour is over, remove pan from oven and allow mixture to cool enough so you can blend the ingredients in a blender.
Using a slotted spoon, remove tomatoes, onion, basil leaves and garlic cloves from the 9 x 13 baking dish. Discard the juices.
Blend tomato mixture and then add brown sugar, parmesan cheese, red pepper flakes, oregano, salt and pepper.
Blend until smooth.
Use, refrigerate for a few days until ready to use or freeze in ZipLoc bags.
This makes about 3 cups of sauce.
NOTE: If you freeze this sauce, when you thaw it, it may be a bit runny due to the ice. Place sauce into a sauce pan and simmer it to thicken.
