Cranberry Orange Bread

Ingredients

  • 1 3/4 cups flour
  • 1/2 tsp baking powder
  • 1/4 tsp baking soda
  • 1/2 tsp salt
  • 1/2 cup buttermilk
  • 6 tbsps butter melted
  • 2 eggs
  • 1/4 cup orange juice fresh
  • 1 1/2 tbsps orange zest
  • 1 cup sugar
  • 1 1/2 cups cranberries, fresh or frozen reserve 1/4 cup
  • 1/2 tbsp flour to coat 1 1/4 cups cranberries, if desired

Icing:

  • 1/2 cup powdered sugar
  • 1-1 1/2 tbsps orange juice or milk

Instructions

  1. Combine melted butter, fresh squeezed orange juice, orange zest, eggs, sugar and buttermilk until smooth and well combined.

  2. Add flour, baking powder, baking soda and salt. Mix until just blended.

  3. Coat 1 1/4 cup cranberries in 1/2 tablespoon flour.

  4. Fold coated cranberries into the batter.

  5. Place batter into a greased 9 x 5 bread pan-or use parchment paper.

  6. Press 1/4 cup reserved cranberries into the top of the batter.

  7. Bake at 350 degrees for 50-55 minutes.

  8. Remove from the oven and place on a cooling rack. Allow 10 minutes to cool.

  9. Use a butter knife to loosen the edges of the bread from the pan. Finish cooling on the cooling rack.

  10. When bread has cooled, make the icing by mixing the powdered sugar with the orange juice or milk.

  11. Drizzle over the top of the bread. Serve and enjoy, refrigerate or slice and freeze.
