Surprise Heart Cupcakes


It is almost time for Valentines Day and these Surprise Heart Cupcakes are perfect to celebrate the holiday! Your family will love the surprise heart inside each one.

Ingredients:

2 boxes Pillsbury white cake mix

Red and blue food coloring

1 jar Betty Crocker whipped vanilla frosting

With one of the cake mixes, follow directions on box and add 20 drops red food coloring and 4 blue for a nice pink color. Bake cake in 9×13 pan according to directions on box.

Let cool in pan for 10 minutes, then transfer to a sheet pan and let cool completely. Once cooled, transfer to freezer for 30 minutes.

After 30 minutes, cut the cake in half horizontally. Use a small heart shaped cookie cutter (small enough to fit in cupcake pan) to cut out hearts in the cake. Once done, put cut out hearts back into freezer for an additional 30 minutes.

While in the freezer, mix the second cake mix according to box instructions and set oven to 350 degrees.

Place liners in the muffin pan. Place a spoonful of the batter in the bottom of each liner. Place the hearts on the batter right side up, with the bottom point of the heart in the bottom of the liner.

Fill batter around the hearts and on top of the hearts so it is covered completely.

Bake for 20 minutes.

Let cool completely before frosting. I used 8 drops red and 1 blue for my frosting and it made it a nice pearly pink color.

Tip: Draw a line on the bottom of each muffin cup so you know which way to cut the cupcake to see the heart.
